Are the natural-wood and Japanese styles the same thing?

They overlap but differ. Japanese emphasises low height, a low centre of gravity and the tatami system; the natural-wood style has no formal constraints and works with modern furniture too.

Do wood tones show dirt?

Pale wood grain does show dust more than dark wood, but dark wood shows fingerprints and dust more. A middle path: pale wood for cabinet doors, dark stone for counters and floors - hiding the parts that show dirt.

Can I use the natural-wood style only in part of the home?

Yes, and it is more common. The typical approach is wood veneer on the living-room TV wall and the bedroom headboard wall, with melamine white elsewhere - costing about the same as minimalism while creating a natural-wood mood.
